An unapologetically fine dining experience—modern, elegant, and effortlessly refined.
When Stuart Ralston approached us to design his newest venture, we were thrilled to be given full creative freedom over the interior architecture and design. Our brief was clear: craft an ultra-fine dining restaurant that feels simple yet sophisticated, modern yet timeless. The starting point was the Georgian building Lyla now calls home, whose exquisite period features—coffered ceilings, ornate cornices, and striking windows—offered a rich canvas. Carefully integrating these into our brief, we set out to create a sense of quiet luxury throughout.
The colour palette balances earthy umber, limestone, and carbon tones, fused with natural oak and sustainable Dekton surfaces—a resilient material crafted from quartz, porcelain, and glass. Every texture, material, and detail was considered to mirror the meticulous craftsmanship of each dish served at Lyla, providing a backdrop that allows the culinary creations to shine.
The journey through Lyla is intentionally layered. A first-floor pre-dinner bar and lounge offers an intimate space for aperitifs and cocktails before guests are guided into the main restaurant and open kitchen. Here, a subtle element of surprise awaits—contrasting spaces that heighten anticipation and delight.
Historical references are woven thoughtfully into the design. The dry ager display, clad in Domus tiles embossed with circular motifs reminiscent of ship rivets, nods to the Royal Terrace’s maritime heritage. The custom bar invites diners to enjoy elevated pre-dinner drinks and snacks, featuring a copper-finished front with a gentle patina, a stone-effect Cosentino slab countertop, and a bronzed polished plaster wall behind.
The result is a space that feels considered, immersive, and timeless—a true reflection of the culinary artistry within. Lyla’s design excellence was recognised with a Scottish Design Award win in 2024, and the restaurant received its first Michelin star in February 2025, celebrating Chef Stuart Ralston’s focus on high-quality Scottish produce at the 28-cover seafood-focused establishment.
